Choosing the right type

Mild green mustards like Green in the Snow are good all-rounders; frilly types such as Golden Streaks add texture to salads; and red mustards like Red Giant bring both colour and a fierce kick. Pick milder kinds for raw baby leaves and the hotter ones for cooking, where the heat softens.

Growing mustard greens from seed

Mustards are about as easy as leaves get. Sow direct little and often, grow densely for cut-and-come-again baby leaves or thin for larger plants, and harvest from just a few weeks old. They thrive in the cool of spring and autumn; in summer heat and long days they bolt fast and turn fiercely hot, so cooler sowings give the sweetest leaves.

As hardy brassicas, many will crop well into autumn and stand light frosts, especially under a cloche.

How hot are mustard greens?
It depends on the type and how they are grown. Young leaves grown cool are gently peppery, while mature leaves and hot-weather growth can be fiercely mustardy. Cooking mellows the heat. When is the best time to sow mustard greens?
Spring and especially autumn, when cool conditions keep the leaves milder and slower to bolt. Summer sowings tend to run to flower quickly. Can I use mustard greens raw?
