A leaf that loves water

True to its name, watercress thrives in cool, constantly moist conditions — you do not need a stream to grow it, just a container kept reliably wet. Its crisp, peppery leaves are superb in salads, sandwiches and soups, and because it crops so quickly it is one of the most satisfying leafy greens to grow at home. It also grows neatly in pots among our container-friendly herbs.

Growing watercress from seed

Sow on the surface of moist compost and keep it permanently damp — standing pots in a tray of water works well. Watercress prefers cool conditions and partial shade, which stops it bolting and keeps the leaves mild and tender. Harvest by snipping the tops, and the plants will regrow for repeated cut-and-come-again pickings.
